Variety and Provenance:
100% BAROSSA VALLEY MATARO. Caillard Mataro is made from small parcels of exceptional quality mataro sourced from the Georgiadis Estate vineyard at Dorrien. The vine age ranges from 20 to 65 years.
After a 10-day heat wave during the 2008 vintage, the fruit was delivered in excellent condition vindicating its reputation as a heat resistant variety.
The fruit was destemmed and crushed, before vinification in two-tonne open stainless steel dairy vats. After chilling, the must was held at 12 – 15°C for an extended period of cold soaking and hand plunging.
At the end of fermentation the wine was allowed to macerate on skins for a couple of days, before being pressed off into a mixture of new and wine seasoned French oak barriques.
2008 Caillard Mataro was barrel aged for 14 months, before meticulous selection and blending.
